As the online restaurant world has become crowded with ghost kitchens serving burgers and crispy chicken, at least one celebrity chef is trying to improve the delivery-only experience.

Michael Mina’s Bourbon Steak in Glendale, the Michelin-starred chef’s steakhouse that offers premium cuts of premium beef and wagyu on its regular menu, has entered the burger delivery business, but the product is more upscale than what you will typically get. find surf food delivery apps.

Its virtual concept, the Bourbon Burger Bar, serves burgers with aged beef, artisan cheeses, exotic spices and toppings such as black truffle. They are served with fries cooked in duck fat.

“It’s the experience of eating a premium burger from the comfort of your own home,” said Dennis Bernardo, executive chef of the steakhouse.

Bourbon Burger Bar is one of two virtual concepts in his cuisine that attempt to raise the bar on only delivered food. The other is Tokyo Hot Chicken.

Virtual concepts, also known as virtual kitchens, cloud kitchens or ghost kitchens, are not configured for on-site meals. Customers place their orders online, and third-party delivery services collect the food and deliver it to their homes.

Many ghost kitchens were born out of necessity during the new coronavirus pandemic as a way to run restaurants.

But an article from the Restaurant Business specialty website suggests that more virtual brands led by chefs enter the market as a way to test creative ideas.

The Bourbon Burger Bar was launched late last year to serve customers during dining room closures, according to Bernardo. But he said it also gives customers a taste of something they’re missing.

“When we opened the Burger Bar it offered something more luxurious, and for many people who couldn’t enjoy the dining experience of a restaurant, it was a change in the offering. From the ingredients to the packaging, it made ordering a burger online more special.

The burgers were selected from menus at Mina’s restaurants, according to Bernardo, and include options such as Prime Dry Aged Steak Burger; Applewood smoked bacon burger; Black truffle steak burger; Roasted vegetarian burger; Heritage; Turkey burger; and BBQ organic salmon burger.

Ordered individually, the burgers are priced at $ 19.95 to $ 25.95, but there is a $ 39.95 package (currently on sale for $ 34.95 during National Burger Month) that includes a hamburger (from a menu of three) served with fries cooked in duck fat, a choice of salad, and choice of dessert.

The concepts are also available in Mina restaurants in San Diego and San Francisco but not in Bourbon Steak in Dana point.

Bernardo said that since the dining rooms reopened, business for virtual concepts fell a bit early in the week, but held up on weekends, with many repeat customers.
